Ingredients

For the Delights:
1 cup cottage cheese (small curd, well-drained)
½ cup breadcrumbs (plus more for coating)
1 large egg
¼ cup grated Parmesan cheese
¼ cup chopped green onions or chives
2 tbsp all-purpose flour
½ tsp garlic powder
½ tsp dried oregano
Salt & pepper to taste
1–2 tbsp oil (for pan-frying or brushing if baking)

Optional Add-Ins:
Grated carrot or zucchini (well-drained)
Chopped spinach
Crushed red pepper flakes

For Dipping (Optional):
Greek yogurt dip
Marinara sauce
Honey mustard
Sriracha mayo


Instructions

Step 1: Prepare the Mixture
In a bowl, combine cottage cheese, breadcrumbs, egg, Parmesan, green onions, flour, garlic powder, oregano, salt, and pepper.
Mix well until everything holds together. If the mixture feels too wet, add an extra tablespoon of breadcrumbs.

Step 2: Shape the Delights
Scoop out 1–2 tablespoons of the mixture and form into small patties or balls.
Roll each gently in breadcrumbs for an extra crispy coating.
Place on a tray or plate as you go.

Step 3: Choose Your Cooking Method

To Pan-Fry:
Heat 1–2 tablespoons of oil in a non-stick skillet over medium heat.
Cook the patties for 2–3 minutes per side until golden brown and crisp.
Transfer to a paper towel-lined plate.

To Bake:
Preheat oven to 400°F (200°C).
Place patties on a parchment-lined baking sheet.
Brush lightly with oil or spray with cooking spray.
Bake for 20–25 minutes, flipping halfway, until golden and firm.

Step 4: Serve
Serve hot with your favorite dipping sauce or alongside a fresh salad or soup.
Garnish with extra herbs or a sprinkle of sea salt for extra flavor.

Notes

Drain Well – Too much moisture in the cottage cheese will make the mixture soft.
Use Fine Breadcrumbs – For even texture and better binding.
Chill if Needed – If the mixture feels too soft, chill it for 15 minutes before shaping.
Air Fry Option – These also crisp up beautifully in an air fryer at 375°F for 10–12 minutes.
Double the Batch – They freeze well and reheat beautifully!
