  • 2/3 cup dry white grape juice
  • 2 cups chicken stock (low sodium preferred)
  • 1/2 cup half-and-half or heavy cream
  • 8 oz jar sun-dried tomatoes packed in oil (drained)
  • 1/2 cup freshly grated parmesan cheese
  • Zest and juice of 1 lemon
  • Fresh basil for garnish
  • Italian seasoning, pepper, and salt

Instructions

  1. In a large deep skillet over medium-low heat, melt the butter and sauté the minced garlic until fragrant.
  2. Pour in the white grape juice; bring to a simmer and reduce by half (about 3–5 minutes).
  3. Add chicken stock, half-and-half, Italian seasoning, sun-dried tomatoes, pepper, and salt. Stir occasionally until it reaches a low boil.
  4. Add spaghetti to the skillet; let it sit for 30 seconds before gently stirring into the liquid.
  5. Cook pasta submerged in sauce for about 5 minutes until al dente.
  6. Stir in parmesan cheese until melted; add lemon zest and juice. Top with fresh basil before serving.
