For the Soup:

  • 1 tbsp olive oil

  • 1 lb turkey sausage (casings removed if using links)

  • 1 medium yellow onion, chopped

  • 3 cloves garlic, minced

  • 4 cups potatoes, peeled and diced (Yukon gold or russet work best)

  • 3 cups low-sodium chicken broth

  • 1 cup water

  • 1 tsp dried thyme

  • 1 tsp dried basil

  • ½ tsp crushed red pepper flakes (optional)

  • Salt and pepper, to taste

For the Creamy Base:

  • 1 cup half-and-half or heavy cream

  • ½ cup milk

  • 2 tbsp all-purpose flour (to thicken)

For Serving & Garnish:

  • 1 cup fresh spinach or kale (optional)

  • ¼ cup shredded cheddar cheese (optional)

  • Chopped fresh parsley

  • Crusty bread or crackers


Instructions

Step 1: Brown the Turkey Sausage

  1. Heat olive oil in a large soup pot over medium heat.

  2. Add the turkey sausage, breaking it up with a spoon.

  3. Cook until browned and cooked through, about 6-8 minutes.

  4. Remove the sausage from the pot and set aside on a plate.

Step 2: Sauté the Aromatics
5. In the same pot, add chopped onion and cook for 3-4 minutes until softened.
6. Stir in the garlic and cook for 30 seconds until fragrant.

Step 3: Add the Potatoes & Broth
7. Return the turkey sausage to the pot.
8. Add the diced potatoes, chicken broth, water, thyme, basil, and crushed red pepper flakes (if using).
9. Stir to combine and season with salt and pepper.
10. Bring to a boil, then reduce heat and simmer for 15-20 minutes until the potatoes are fork-tender.

Step 4: Make It Creamy
11. In a small bowl, whisk the flour into the milk until smooth.
12. Stir the mixture into the soup.
13. Add the half-and-half or heavy cream and stir well.
14. Simmer the soup for another 5-7 minutes, stirring occasionally, until slightly thickened and creamy.

Step 5: Add Greens (Optional)
15. If using spinach or kale, stir it into the soup and cook for 2-3 minutes until wilted.

Step 6: Taste, Garnish & Serve
16. Taste and adjust seasoning with more salt, pepper, or herbs if needed.
17. Ladle the soup into bowls and garnish with shredded cheddar cheese and chopped parsley.
18. Serve hot with crusty bread or crackers on the side.

Notes

Use Yukon Gold Potatoes – They hold their shape well and have a naturally buttery flavor.
Thicken to Your Liking – Add more flour or simmer longer if you prefer a thicker soup.
Cream Substitute – For a lighter version, use evaporated milk or extra broth in place of cream.
Make It Spicy – Swap the turkey sausage for a spicy version, or add more red pepper flakes.
Don’t Overcook – Once the potatoes are tender, avoid over-simmering to keep them from becoming mushy.
