  • 1 tbsp olive oil

  • 1 small yellow onion, finely chopped

  • 2 cloves garlic, minced

  • 2 cups frozen green peas (no need to thaw)

  • 1½ cups vegetable broth

  • 1 cup heavy cream (or half-and-half for a lighter version)

  • ½ tsp salt

  • ½ tsp black pepper

  • ½ tsp garlic powder

  • ¼ tsp dried thyme

  • ¼ cup grated Parmesan cheese (optional, for extra richness)

Optional Add-Ins:

  • 1 cup cooked shredded chicken or beef

  • 1 cup sautéed mushrooms

  • 1 tbsp chopped fresh parsley for garnish

  • Extra Parmesan or shredded mozzarella for topping


Instructions

Step 1: Cook the Noodles
Bring a large pot of salted water to a boil.
Add the egg noodles and cook according to package directions until al dente.
Drain and set aside. Don’t rinse—this helps the sauce stick better.

Step 2: Sauté the Aromatics
In the same pot or a large skillet, heat the butter and olive oil over medium heat.
Add the chopped onion and cook for 3–4 minutes until soft and translucent.
Stir in the minced garlic and cook for another 30 seconds until fragrant.

Step 3: Add Peas and Broth
Pour in the vegetable broth and bring to a gentle simmer.
Add the frozen peas and stir to combine. Let cook for 2–3 minutes to heat through.

Step 4: Create the Creamy Sauce
Reduce the heat to low and stir in the heavy cream.
Add salt, black pepper, garlic powder, and dried thyme.
Let the mixture simmer for 5–6 minutes, stirring occasionally, until slightly thickened.

Step 5: Combine Noodles and Cheese
Add the cooked noodles back into the pot.
Toss to coat the noodles in the creamy sauce.
Stir in the Parmesan cheese if using, and mix until melted and creamy.

Step 6: Finish and Garnish
Taste and adjust seasoning as needed.
Sprinkle with extra cheese or parsley if desired.
Serve warm and enjoy!

Notes

Use Full-Fat Cream – For the richest flavor, use heavy cream over milk.
Don’t Overcook the Peas – Add them after the broth heats up to maintain their bright color and slight bite.
