Ingredients
For the Creamy Garlic Chicken:

4 boneless, skinless chicken breasts

2 tbsp olive oil or butter

Salt and pepper to taste

6 cloves garlic, minced

1 small onion, finely chopped

½ cup chicken broth
-
1 cup heavy cream (or light cream)

½ tsp dried thyme
-
½ tsp dried basil
-
¼ tsp red pepper flakes (optional)

⅓ cup grated Parmesan cheese

Fresh parsley for garnish
For the Herb Mashed Potatoes:

2 lbs (900 g) potatoes (Yukon Gold or Russet)

3 tbsp butter
-
½ cup milk or cream
-
Salt and pepper to taste

2 tbsp chopped fresh chives
-
1 tbsp chopped fresh parsley
-
Optional: 1 clove garlic, minced and sautéed in butter
Instructions
Step 1: Make the Herb Mashed Potatoes

Peel and chop the potatoes into even chunks.

Place in a pot and cover with cold, salted water.

Bring to a boil and cook until fork-tender, about 15–20 minutes.

Drain the water and return potatoes to the pot.

Add butter, milk or cream, salt, and pepper.

Mash until smooth, then stir in chopped chives and parsley.

Cover and keep warm until ready to serve.
Step 2: Cook the Chicken
8. Season chicken breasts with salt and pepper on both sides.
9. Heat olive oil or butter in a large skillet over medium-high heat.
10. Add the chicken and sear for 5–6 minutes per side until golden and cooked through. Remove from the skillet and set aside.
Step 3: Make the Creamy Garlic Sauce
11. In the same skillet, lower the heat to medium.
12. Add minced garlic and chopped onion. Sauté for 2–3 minutes until fragrant and soft.
13. Pour in chicken broth and scrape up any browned bits. Simmer for 2 minutes.
14. Stir in cream, thyme, basil, and red pepper flakes if using.
15. Simmer for 5–6 minutes until slightly thickened.
16. Add Parmesan and stir until melted and smooth.
17. Return the chicken to the skillet and spoon sauce over the top. Simmer for 2–3 minutes.
Step 4: Serve & Enjoy
18. Plate a generous scoop of herb mashed potatoes.
19. Place a chicken breast on top and spoon over the creamy garlic sauce.
20. Garnish with fresh parsley and serve warm.
