  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 2 cups potatoes, peeled and diced small

  • 1 carrot, grated or finely chopped

  • 2 tbsp all-purpose flour

  • 2 cups chicken or beef broth

  • 1½ cups milk (or use half-and-half for extra creaminess)

  • 1 cup shredded cheddar cheese (plus more for topping)

  • ½ tsp salt

  • ½ tsp black pepper

  • ½ tsp smoked paprika (optional)

  • 1 tbsp ketchup (for that cheeseburger essence)

  • 1 tbsp mustard (optional, for extra burger flavor)

  • 1 tbsp olive oil or butter

Toppings (Optional but Recommended):

  • Pickle slices or relish

  • Chopped green onions

  • Extra shredded cheddar

  • Crumbled cooked turkey bacon or crispy onions

  • Toasted croutons or mini burger buns on the side


Instructions

Step 1: Cook the Ground Beef

  1. Heat olive oil or butter in a large pot over medium heat.

  2. Add ground beef and cook until browned, breaking it up as it cooks.

  3. Drain excess fat if needed, then add chopped onion and garlic.

  4. Sauté for 3–4 minutes until the onion is soft and fragrant.

Step 2: Add Vegetables
5. Stir in the grated carrot and diced potatoes.
6. Sprinkle in the flour and stir well to coat everything evenly.
7. Cook for 1–2 minutes to cook off the raw flour taste.

Step 3: Build the Soup Base
8. Slowly pour in the broth, stirring constantly to prevent lumps.
9. Add milk, ketchup, mustard (if using), salt, pepper, and smoked paprika.
10. Bring to a simmer and cook for 15–20 minutes, or until potatoes are tender.

Step 4: Add the Cheese
11. Once the soup is thickened and the potatoes are cooked, reduce heat to low.
12. Stir in shredded cheddar cheese until melted and smooth.
13. Taste and adjust seasoning if needed.

Step 5: Serve and Garnish
14. Ladle soup into bowls and top with your favorite cheeseburger-inspired garnishes.
