Description

Cottage Cheese Pumpkin Muffins are a delightful treat that perfectly captures the essence of fall.   • 1 large egg
  • 1 cup cottage cheese
  • 1 cup pumpkin puree
  • 1/2 cup maple syrup or honey
  • 3 tablespoons mild oil (such as avocado oil)
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 2 cups all-purpose flour
  • 1/2 cup mini chocolate chips
  • 1/4 cup pumpkin seeds

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with liners, lightly spraying them with cooking spray.
  2. In a blender, combine the egg and cottage cheese. Blend until smooth.
  3. Transfer the mixture into a large mixing bowl and add the pumpkin puree, maple syrup, oil, vanilla extract, pumpkin pie spice, cinnamon, baking powder, and baking soda. Whisk until well combined.
  4. Gently fold in the flour until just mixed; avoid overmixing. Stir in the mini chocolate chips.
  5. Fill each muffin liner with batter and sprinkle pumpkin seeds on top.
  6. Bake for about 22–23 minutes or until a toothpick comes out clean when inserted into the center.
  7. Allow to cool for about 15 minutes before removing from the tin.
