- 1 large egg
- 1 cup cottage cheese
- 1 cup pumpkin puree
- 1/2 cup maple syrup or honey
- 3 tablespoons mild oil (such as avocado oil)
- 1 teaspoon pure vanilla extract
- 1 tablespoon pumpkin pie spice
- 1 teaspoon cinnamon
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 2 cups all-purpose flour
- 1/2 cup mini chocolate chips
- 1/4 cup pumpkin seeds
Instructions
- Preheat your oven to 375°F (190°C) and line a muffin tin with liners, lightly spraying them with cooking spray.
- In a blender, combine the egg and cottage cheese. Blend until smooth.
- Transfer the mixture into a large mixing bowl and add the pumpkin puree, maple syrup, oil, vanilla extract, pumpkin pie spice, cinnamon, baking powder, and baking soda. Whisk until well combined.
- Gently fold in the flour until just mixed; avoid overmixing. Stir in the mini chocolate chips.
- Fill each muffin liner with batter and sprinkle pumpkin seeds on top.
- Bake for about 22–23 minutes or until a toothpick comes out clean when inserted into the center.
- Allow to cool for about 15 minutes before removing from the tin.
