Ingredients

Scale

2 cups all-purpose flour (or bread flour)
1 cup whole wheat flour (or use all-purpose if preferred)
1 packet (2¼ tsp) instant yeast
1½ tsp salt
1 tbsp honey or sugar
1 cup cottage cheese (small curd, full-fat or low-fat)
½ cup warm water (100–110°F or 38–43°C)
1 egg, room temperature
2 tbsp olive oil or melted butter

Optional Add-ins
1 tbsp flaxseeds or chia seeds
1 tbsp sunflower seeds or oats for topping
½ tsp dried herbs (rosemary, basil)
Grated cheese for extra savory flavor


Instructions

Step 1: Activate the Yeast
In a bowl, mix warm water, honey (or sugar), and yeast. Let sit for 5–10 minutes until bubbly and foamy.

Step 2: Mix the Dough
In a large bowl, combine flour, salt, and any optional dry add-ins.
In a separate bowl, whisk together cottage cheese, egg, and oil. Add to the yeast mixture.
Stir the wet ingredients into the dry mix using a spatula until a shaggy dough forms.

Step 3: Knead the Dough
Knead the dough on a floured surface for about 5–7 minutes until smooth and elastic. If it’s too sticky, add a bit more flour.
(For no-knead version: cover the dough and let it rise for 12–18 hours at room temperature before shaping.)

Step 4: First Rise
Place the dough in a greased bowl, cover, and let rise in a warm place for 1 to 1½ hours, or until doubled in size.

Step 5: Shape and Second Rise
Punch down the dough and shape into a loaf. Place into a greased loaf pan. Cover and let rise again for 30–45 minutes until puffy and just above the rim.

Step 6: Bake
Preheat oven to 375°F (190°C). Bake for 30–35 minutes, or until golden brown and sounds hollow when tapped.
Let cool in the pan for 5 minutes, then transfer to a wire rack.

Step 7: Cool and Slice
Allow the bread to cool for at least 20 minutes before slicing to avoid a gummy texture.
