  • 1/2 cup shredded coconut
  • 3/4 cup coconut sugar
  • 2 eggs
  • 1 cup cottage cheese
  • 1/4 cup coconut oil or preferred oil
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 3/4 cup diced pineapple

Instructions

  1. Preheat your oven to 350°F (180°C) and line a muffin tin with paper liners or grease it lightly.
  2. In a blender, blend cottage cheese with ¼ cup diced pineapple until smooth.
  3. In a large bowl, mix the blended cottage cheese with eggs, coconut sugar, oil, and vanilla extract until smooth.
  4. Combine flour, shredded coconut, baking powder, baking soda, salt, and remaining pineapple into the wet mixture and stir until thick batter forms.
  5. Fill muffin cups nearly to the top with batter.
  6. Optionally add toppings like shredded coconut or a piece of pineapple on each muffin before baking.
  7. Bake for 25–30 minutes or until a toothpick inserted comes out clean.
  8. Cool slightly in the tin before transferring to a wire rack.
