4 cups sweet potatoes (about 2 large), peeled and diced into 1-inch cubes
2 tbsp olive oil
3 tbsp pure maple syrup
1 tsp ground cinnamon
½ tsp salt
¼ tsp black pepper

Instructions
Step 1: Preheat Oven
Preheat your oven to 400°F (200°C).
