Ingredients

Scale

4 cups sweet potatoes (about 2 large), peeled and diced into 1-inch cubes
2 tbsp olive oil
3 tbsp pure maple syrup
1 tsp ground cinnamon
½ tsp salt
¼ tsp black pepper
Optional: pinch of ground nutmeg or cayenne (for extra warmth or a mild kick)

Optional Garnishes:
Chopped pecans or walnuts
Fresh thyme or rosemary
Drizzle of extra maple syrup after roasting

Instructions

Step 1: Preheat Oven
Preheat your oven to 400°F (200°C).
Line a baking sheet with parchment paper or foil for easy cleanup.

Step 2: Season the Sweet Potatoes
In a large bowl, combine diced sweet potatoes with olive oil, maple syrup, cinnamon, salt, and pepper.
Toss until everything is evenly coated. Add nutmeg or cayenne if desired.

Step 3: Arrange on Baking Sheet
Spread the seasoned sweet potatoes in a single layer on the prepared baking sheet.
Make sure they are not crowded—this helps them roast, not steam.

Step 4: Roast
Roast for 25–30 minutes, flipping halfway through, until sweet potatoes are golden, tender, and slightly caramelized.

Step 5: Garnish & Serve
Transfer to a serving dish and sprinkle with chopped nuts or herbs if using.
Drizzle with a little extra maple syrup if you like them extra sweet. Serve warm.

Notes

Cut Evenly – Uniform pieces ensure even cooking.
Don’t Overcrowd – Use two trays if necessary for the best roast.
Flip Halfway – Promotes even browning and caramelization.
Adjust Sweetness – Use less maple syrup if serving with a sweet main dish.
Batch Friendly – Double the recipe for large gatherings.
