  • 2 lbs ground chicken
  • 1 large egg
  • 3/4 cup breadcrumbs
  • 1/2 cup ricotta cheese
  • 2 cups spinach (finely chopped)
  • 5 tbsp unsalted butter
  • 4 cloves garlic (minced)
  • 1 3/4 cups whole milk
  • 1 cup heavy cream
  • 1/3 cup Parmesan cheese

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a mixing bowl, combine ground chicken, egg, breadcrumbs, ricotta cheese, garlic powder, Italian seasoning, paprika, diced onion, sea salt, and black pepper. Mix until well incorporated.
  3. Shape the mixture into golf-ball-sized meatballs and place them on a parchment-lined baking tray.
  4. Bake for 25-30 minutes until golden brown and cooked through (internal temperature should reach 165°F/74°C).
  5. While baking, melt butter in a skillet over medium heat and sauté minced garlic for one minute.
  6. Stir in whole milk and heavy cream; thicken using either an egg yolk or flour as preferred.
  7. Add spinach to the sauce and cook until tender before mixing in Parmesan cheese and seasonings.
  8. Combine baked meatballs with the sauce and serve hot.
