For the Sauce:

  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp hoisin sauce
  • 1 tsp sesame oil
  • 1 tsp sugar
  • 1/4 cup chicken broth
  • 1 tsp cornstarch

For the Chow Mein:

 

  • 8 oz chow mein noodles (or thin egg noodles)
  • 2 tbsp vegetable oil
  • 1 lb boneless, skinless chicken breast, thinly sliced
  • 2 cloves garlic, minced
  • 1 small onion, sliced
  • 1 cup shredded cabbage
  • 1/2 cup julienned carrots
  • 1/2 cup bell pepper, thinly sliced
  • 1/2 cup bean sprouts
  • 2 green onions, sliced

Instructions

Step 1: Cook the Noodles

  1. Boil water in a large pot and cook the chow mein noodles according to package instructions. Drain, rinse with cold water, and set aside.

Step 2: Prepare the Sauce

  1. In a small bowl, whisk together soy sauce, oyster sauce, hoisin sauce, sesame oil, sugar, chicken broth, and cornstarch. Set aside.

Step 3: Cook the Chicken

  1. Heat 1 tbsp vegetable oil in a large skillet or wok over medium-high heat. Add sliced chicken and cook for 4–5 minutes until golden brown and cooked through. Remove from the pan and set aside.

Step 4: Stir-Fry the Vegetables

  1. Add the remaining 1 tbsp oil to the pan. Stir in garlic, onion, cabbage, carrots, and bell pepper. Stir-fry for 2–3 minutes until slightly tender.

Step 5: Combine Everything

  1. Add the cooked noodles and chicken back to the pan. Pour in the sauce and toss everything together for 2–3 minutes until the sauce thickens and coats the noodles.

Step 6: Final Touches

  1. Stir in bean sprouts and green onions. Toss for another 30 seconds, then remove from heat.

Step 7: Serve & Enjoy!

 

  1. Serve hot, garnished with extra green onions or sesame seeds if desired.

  • Refrigerate: Store in an airtight container for up to 3 days.
  • Reheat: Warm in a skillet with a splash of water or broth.
  • Freeze: Not recommended, as the noodles may become mushy.
