Ingredients
For the Chicken Mixture:

2 cups cooked chicken breast, shredded or cubed

1 tbsp olive oil

1 small yellow onion, finely chopped

3 cloves garlic, minced

1 tsp Italian seasoning

½ tsp salt

½ tsp black pepper

For the Creamy Spinach Base:

1 package (10 oz) frozen chopped spinach, thawed and well-drained

1 block (8 oz) cream cheese, softened

½ cup sour cream

½ cup grated Parmesan cheese

1 cup shredded mozzarella cheese

¼ cup milk (any kind)
For Topping:

½ cup shredded mozzarella cheese

2 tbsp grated Parmesan

1 tbsp chopped parsley (optional, for garnish)
Instructions
Step 1: Preheat the Oven
Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch casserole dish with a bit of olive oil or nonstick spray.
Step 2: Sauté the Aromatics
In a medium skillet, heat olive oil over medium heat.
Add chopped onion and sauté for 2-3 minutes until translucent.
Stir in garlic, Italian seasoning, paprika, salt, and pepper. Cook for another 1-2 minutes until fragrant.
Step 3: Combine Chicken & Spinach Mixture
In a large mixing bowl, combine the cooked chicken, sautéed onion mixture, thawed and squeezed spinach, softened cream cheese, sour cream, milk, Parmesan, and 1 cup mozzarella.
Mix until everything is well incorporated. The cream cheese should be evenly distributed throughout.
Step 4: Assemble the Casserole
Spread the chicken and spinach mixture evenly into the prepared casserole dish.
Sprinkle the top with the remaining ½ cup mozzarella cheese and 2 tbsp Parmesan.
Step 5: Bake Until Golden and Bubbly
Cover the casserole with foil and bake for 20 minutes.
Remove the foil and bake for an additional 10-15 minutes, or until the top is golden and the edges are bubbling.
Step 6: Garnish and Serve
Remove from oven and let it sit for 5 minutes before serving.
Sprinkle with fresh parsley if desired.
