  • 4 chai tea bags
  • 135 g softened unsalted butter
  • 135 g light brown sugar
  • 2 large eggs
  • 200 g self-raising flour
  • Spices: cinnamon, ground ginger, ground cloves, ground cardamom, ground nutmeg

Instructions

  1. Heat milk until hot but not boiling; steep chai tea bags for 10-15 minutes.
  2. Preheat oven to 160°C (fan) / 180°C / 350°F; line a cupcake tin with cases.
  3. Cream softened butter and sugar until smooth.
  4. Add eggs and vanilla extract; mix until combined.
  5. In another bowl, whisk together dry ingredients: flour and spices.
  6. Gradually mix in the chai-infused milk into the butter mixture until well combined.
  7. Divide batter among cases and bake for 20-25 minutes until golden.
  8. Allow cooling completely on a wire rack before frosting with spiced buttercream.
