  • 1 lb carrots, peeled and diced
  • 1 lb potatoes, peeled and diced
  • 2 ½ cups low-sodium vegetable broth
  • Seasonings: Italian herbs, thyme, parsley, salt, pepper

Instructions

  3. Pour in vegetable broth and bring to a boil. Lower the heat, cover the pot, and let it simmer for about 20 minutes.
  4. Let the mixture cool slightly before blending until smooth using either a stand blender or hand blender.
  5. Return blended soup to the pot; taste and adjust seasoning if necessary. Stir in fresh parsley before serving.
