- 3/4 cup finely grated carrot (2–3 medium carrots)
- 1/3 cup shredded sweetened coconut
- 1/2 cup unsalted butter, softened
- 1/4 cup cream cheese, chilled
- 2 1/2 cups powdered sugar
- 1 teaspoon vanilla extract
- 1 tablespoon heavy cream
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine browned butter with granulated and brown sugars until smooth. Add the egg and vanilla extract; mix well.
- In another bowl, whisk together flour, oats, baking soda, cinnamon, ginger, nutmeg, and salt. Gradually fold this dry mixture into the wet ingredients before incorporating grated carrots and shredded coconut.
- Drop spoonfuls of dough onto the prepared baking sheet, leaving space between each cookie. Bake for about 10 minutes until golden at the edges but soft in the center. Cool on a wire rack.
- For the buttercream filling, beat softened butter and chilled cream cheese until creamy. Gradually add powdered sugar and mix in vanilla extract and heavy cream until fluffy.
- Once cookies are cool, spread cream cheese buttercream on one half of each cookie and top with another half to create sandwiches.
