  • Fettuccine
  • Olive oil
  • Butter
  • Leeks
  • Oyster mushrooms
  • Garlic
  • Heavy cream
  • Gruyere cheese
  • Balsamic vinegar
  • Lemon zest

Instructions

  1. Heat olive oil and 2 tablespoons of butter in a large sauté pan over medium heat. Add sliced leeks, season with salt and sugar, and cook until golden, about 20 minutes.
  2. Add apple juice to the leeks, allowing it to reduce before removing from the pan.
  3. In the same pan, melt remaining butter and add mushrooms in a single layer. Cook until browned on both sides, seasoning with salt and pepper.
  4. Stir in garlic and sage, cooking for 1 minute before returning the leeks to the pan with heavy cream, balsamic vinegar, and lemon zest. Allow to simmer until thickened.
  5. Cook fettuccine according to package instructions; reserve 1 cup of pasta water.
  6. Combine fettuccine with sauce, adding reserved pasta water, Gruyere cheese, and black pepper. Toss well.
  7. Serve immediately garnished with toasted pine nuts.
