- 1 1/4 cups all-purpose flour
- 1 cup bread flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp salt
- 3 1/2 to 4 oz cubed fresh mozzarella cheese
- 2 tbsp chopped fresh basil
- 1/3 cup chopped sun-dried tomatoes (not packed)
- 2 eggs
- 2 1/2 tbsp grape-seed oil (or extra virgin olive oil)
- 1 1/4 cups buttermilk
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8×4 inch bread pan.
- In a large bowl, mix together all-purpose flour, bread flour, baking powder, baking soda, and salt until combined.
- Add chopped basil, cubed mozzarella, and sun-dried tomatoes to the flour mixture; stir gently.
- In another bowl, whisk together eggs, grape-seed oil, and buttermilk until smooth.
- Pour the wet ingredients into the dry mixture; stir until just combined (the dough will be sticky).
- Transfer the dough to the greased bread pan and spread it evenly.
- Bake for about 40-45 minutes or until a toothpick inserted comes out clean.
