Instructions

Step 1: Prep Your Work Area
Preheat your oven to 400°F (200°C).
Line a baking sheet with parchment paper and set aside.
Lightly flour your surface and gently roll out the puff pastry to smooth creases.

Step 2: Add the Filling
Sprinkle the crumbled blue cheese evenly across the puff pastry.
Add chopped toasted walnuts on top of the cheese.
Scatter the fresh thyme leaves and season with black pepper.
Drizzle honey lightly if you want a sweet-savory contrast.

Step 3: Fold & Press
Fold the puff pastry in half lengthwise (like a book), gently pressing down so the filling stays in place.
Use a rolling pin to press lightly, flattening slightly for even thickness.

Step 4: Slice Into Strips
With a sharp knife or pizza cutter, cut the folded pastry into strips about ½ inch wide.
You should get around 12–14 strips depending on the size of your pastry sheet.

Step 5: Twist & Arrange
Take each strip and gently twist both ends in opposite directions to create a spiral.
Place each twist on the lined baking sheet, spacing them apart slightly.

Step 6: Brush & Bake
Brush the tops of the twists with beaten egg using a pastry brush.
This helps them bake up golden and crisp.
Bake for 15–18 minutes, or until puffed and golden brown.

Step 7: Cool & Serve
