Ingredients
For the Filling:
2 cups cooked chicken, diced or shredded
1½ cups frozen mixed vegetables (peas, carrots, corn, green beans)
1 can (10.5 oz) cream of chicken soup
½ cup chicken broth
½ tsp garlic powder
½ tsp onion powder
Salt and pepper to taste
For the Biscuit Topping:
1 cup Bisquick baking mix
½ cup milk
1 large egg
Instructions
Step 1: Preheat the Oven
Preheat your oven to 400°F (200°C). Lightly grease your pie dish or baking pan.
Step 2: Make the Filling
In a large bowl, mix together the cooked chicken, frozen vegetables, cream of chicken soup, chicken broth, garlic powder, onion powder, salt, and pepper. Pour the filling into your prepared dish and spread it evenly.
Step 3: Mix the Biscuit Topping
In a separate bowl, whisk together the Bisquick, milk, and egg until smooth. Pour the batter over the top of the chicken mixture and spread it gently with a spatula.
Step 4: Bake
Bake uncovered for 30–35 minutes, or until the topping is golden brown and cooked through.
Step 5: Cool and Serve
Let rest for 5 minutes before serving. Spoon into bowls or slice into squares and enjoy warm.
Notes
Use Leftover Chicken – Rotisserie chicken or holiday leftovers work great
Check the Topping – If it browns too quickly, loosely tent with foil
Frozen or Fresh Veggies – Both work well. If using fresh, lightly steam before adding
Make It Creamier – Stir ¼ cup sour cream into the filling for extra richness
