Ingredients
For the Tarts:

1 sheet puff pastry, thawed

1 bunch fresh asparagus (trimmed, about 20 spears)

1 tbsp olive oil

½ tsp salt

½ tsp black pepper

1 tsp lemon zest
For the Cheese Filling:

½ cup ricotta cheese

¼ cup cream cheese, softened

¼ cup grated parmesan cheese

1 garlic clove, minced

½ tsp dried thyme or Italian seasoning

Salt and pepper to taste

Instructions
Step 1: Preheat the Oven & Prep Puff Pastry

Preheat your oven to 400°F (200°C).

Line a baking sheet with parchment paper.

Unroll the thawed puff pastry and cut it into 4 equal rectangles.

Place the rectangles on the prepared baking sheet.

Use a knife to lightly score a ½-inch border around each rectangle (don’t cut all the way through).

Prick the inside area with a fork to prevent over-puffing.
Step 2: Make the Cheese Spread
7. In a small bowl, mix ricotta, cream cheese, parmesan, garlic, thyme, salt, and pepper.
8. Stir until smooth and well combined.
Step 3: Prepare the Asparagus
9. Trim the tough ends off the asparagus.
10. Toss with olive oil, salt, pepper, and lemon zest in a bowl to coat evenly.
Step 4: Assemble the Tarts
11. Spread a generous layer of the cheese mixture inside the scored border of each puff pastry rectangle.
12. Arrange asparagus spears on top, laying them neatly across the tart (whole or halved lengthwise if thick).
13. Press them gently into the cheese mixture to keep them in place.
Step 5: Bake
14. Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and puffed, and the asparagus is tender.
15. Keep an eye during the last few minutes to prevent overbaking.
Step 6: Garnish & Serve
16. Remove from the oven and cool slightly.
17. Garnish with shaved parmesan or feta, fresh herbs, and a squeeze of lemon juice.
