  • 1 ¼ cup full-fat milk
  • 2 tablespoons honey
  • ½ cup sugar
  • 2 tablespoons cornstarch
  • 3 large apples, peeled, cored, and diced
  • 3 tablespoons water
  • 3 tablespoons sugar (for compote)
  • ¼ cup raisins
  • ¾ teaspoon ground cinnamon
  • ¼ cup chopped pecans (or walnuts)
  • Waffle cones (optional)

Instructions

  1. Prepare your ice cream maker by freezing the bowl for at least 16 hours.
  2. In a small bowl, mix sugar and cornstarch; set aside.
  3. In a large saucepan, combine milk, heavy cream, and honey. Heat gently until simmering. Whisk in the sugar-cornstarch mixture and cook for about 3 minutes until slightly thickened. Remove from heat and cool at room temperature before refrigerating for at least six hours.
  4. In a small saucepan, combine apples, sugar, water, cinnamon, and raisins. Cook over low heat for approximately 45 minutes until soft; cool before refrigerating.
  5. Once chilled, churn the apple ice cream mixture in your ice cream maker according to its instructions (20 to 30 minutes).
  6. Transfer to a freezer-safe container and freeze for several hours before serving.
