  • 1½ cups fresh apple cider
  • 4 tablespoons cold unsalted butter, diced
  • 2 large eggs
  • 1/3 cup granulated sugar
  • ½ cup lightly packed brown sugar
  • 1/3 cup light olive oil
  • ¼ cup sour cream
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1½ teaspoons ground cinnamon
  • Pinch of allspice
  • 1/4 teaspoon coarse kosher salt
  • 1¾ cups all-purpose flour

Instructions

  1. Preheat your oven to 350°F. Grease a 9” square baking dish and line it with parchment paper.
  2. In a sauté pan, boil the apple cider until reduced by half (about 5 minutes). Measure out ¾ cup after reducing and whisk in the diced butter until melted.
  3. In a medium bowl, whisk together eggs, granulated sugar, brown sugar, olive oil, sour cream, baking powder, baking soda, cinnamon, allspice, and salt until smooth.
  4. Gradually whisk in the hot cider mixture until well combined.
  5. Gently stir in flour until just incorporated; do not overmix.
  6. Pour batter into the prepared dish and smooth the top with a spatula.
  7. Bake for 22–25 minutes or until golden brown and a toothpick comes out clean.
  8. Cool slightly on a rack for about 5 minutes then top with melted butter and sprinkle with cinnamon-sugar before lifting out using the parchment sling to cool completely.
