- 1–½ cups fresh apple cider
- 4 tablespoons cold unsalted butter, diced
- 2 large eggs
- 1/3 cup granulated sugar
- ½ cup lightly packed brown sugar
- 1/3 cup light olive oil
- ¼ cup sour cream
- 1–½ teaspoons baking powder
- ½ teaspoon baking soda
- 1–½ teaspoons ground cinnamon
- Pinch of allspice
- 1/4 teaspoon coarse kosher salt
- 1–¾ cups all-purpose flour
Instructions
- Preheat your oven to 350°F. Grease a 9” square baking dish and line it with parchment paper.
- In a sauté pan, boil the apple cider until reduced by half (about 5 minutes). Measure out ¾ cup after reducing and whisk in the diced butter until melted.
- In a medium bowl, whisk together eggs, granulated sugar, brown sugar, olive oil, sour cream, baking powder, baking soda, cinnamon, allspice, and salt until smooth.
- Gradually whisk in the hot cider mixture until well combined.
- Gently stir in flour until just incorporated; do not overmix.
- Pour batter into the prepared dish and smooth the top with a spatula.
- Bake for 22–25 minutes or until golden brown and a toothpick comes out clean.
- Cool slightly on a rack for about 5 minutes then top with melted butter and sprinkle with cinnamon-sugar before lifting out using the parchment sling to cool completely.
