Ingredients
For the Salad:
-
1 can (20 oz) crushed pineapple, undrained
-
1 can (15 oz) fruit cocktail, drained
-
1 cup miniature marshmallows
-
1 cup whipped topping (like Cool Whip)
-
1 package (3 oz) instant vanilla pudding mix
-
1 cup sour cream
-
1 cup sweetened shredded coconut
-
½ cup chopped pecans or walnuts (optional)
-
½ cup maraschino cherries, halved (plus extra for garnish)
Instructions
Step 1: Mix the Cream Base
-
In a large mixing bowl, combine the instant vanilla pudding mix and sour cream.
-
Stir until smooth and creamy.
-
Gently fold in the whipped topping until fully combined.
Step 2: Add the Fruits and Extras
-
Stir in the crushed pineapple (with juice), drained fruit cocktail, shredded coconut, and miniature marshmallows.
-
Add the chopped pecans or walnuts if using.
-
Gently fold in the halved maraschino cherries.
Step 3: Chill the Salad
-
Cover the bowl with plastic wrap and refrigerate for at least 1–2 hours.
-
Chilling allows the flavors to meld together and the salad to thicken.
Step 4: Serve
-
Transfer to a large serving bowl or divide into individual cups.
-
Garnish with extra maraschino cherries and a sprinkle of coconut or nuts if desired.
-
Serve chilled and enjoy!
Notes
Use Good Quality Fruit – Fresh-tasting canned fruit makes a big difference.
Don’t Overmix – Gently fold ingredients to keep the salad light and fluffy.
Chill Well – The salad tastes best when it’s had time to set and chill properly.
Add a Twist – Try using mandarin oranges, diced peaches, or even bananas for variety.
Make It Nut-Free – Omit the nuts if serving to guests with allergies.
