Ingredients
- 3 cups leftover mashed potatoes
- 3 slices crumbled turkey turkey bacon
- 1 block of cheddar cheese (cut into cubes)
- 1.5 cups breadcrumbs
- 2 tablespoons grated Parmesan
- 2 large eggs
- 1 tablespoon milk
- Salt and black pepper to taste
- Cooking oil spray
Instructions
- In a mixing bowl, combine leftover mashed potatoes, crumbled turkey turkey bacon, salt, pepper, and optional garlic powder.
- With floured hands, scoop out some potato mixture, flatten it into a disk, place a cheese cube in the center, and mold the mixture around it to form a ball.
- Set up three shallow dishes: one with flour, one with egg mixed with milk, and one with breadcrumbs combined with Parmesan. Dip each ball first in flour, then the egg mixture, and finally in breadcrumbs.
- Preheat your air fryer to 370°F (190°C). Arrange the coated balls in the basket without overcrowding and lightly spray them with cooking oil.
