Instructions
Step 1: Prepare the Eggplant
Slice the eggplant into ½-inch thick rounds.
Place slices in a single layer on a paper towel-lined surface or colander.
Sprinkle with salt on both sides and let sit for 15 minutes to draw out excess moisture.
After 15 minutes, pat dry with paper towels.
Step 2: Set Up Breading Stations
